Which sign is most compatible with a Virgo...Capricorn or Gemini?

I am a Virgo and I have one guy who likes me and is a Capricorn and another who is also interested in me who is a Gemini.

Is one a better match for me than the other? Are there any fellow virgo ladies out there who have had experiences with either of these signs and can share their thoughts? Does someones sign even matter?

Virgos go best with Virgos, and any other earth signs - Capricorns, Tauruses. I'm just assuming here, but a Virgo man will be similar with you in liking traditional things, being at home, responsible, nurturing and caring for your relationship.

Geminis - air signs, (which I am) are very free-flying people. We like our independence, we want change, flirt (altho I don't), multi-task and do things spontaneously. Of course i don't know if your Gemini interest has a different Ascending sign, but I hear Gemini men aren't the best to date in general... so mixing air and earth may be a bad idea. I dated a very Capricorn man last year and it was pretty much a disaster after the initial lusting stage. He wanted to tie me down, I wanted to be free.

These are just general rule of thumbs, but take it with a grain of salt if you feel like it doesn't apply. :)

Your best bet is Taurus, Capricorn, Cancer and Scorpio, so in your set, it would be the capricorn. But signs mean nothing, go with your heart and brain.

In some cases i would say that sign matters if you are into the zodiac, but for the most part I would say "no" signs are not that important, however, what is most important is who do you feel most compatible with? that's going to be the ultimate answer to your question.
