Silent NIght is very easy in open G (DGDGBD).

I don't know of any that are primarily for guitar, but "Silent Night" is one of the simplest of carols, in terms of harmony, and that's mainly what you'd cover playing guitar.
It is also quite slow compared to most other carols. This would allow you, as a Beginner, to keep the pace whilst making the chord changes.
